Okay, it's me again! How do you cook an artichoke? I had them while on a trip to California years ago, but I have never cooked one myself. Yum, I can't wait to try.
I am working towards that perfect mojito, also. I have come closer. Using simple syrup instead of sugar when mulling the lime and mint helps. I have also found Parrot Bay Key Lime Rum makes it so smooth. I found it in Chicago. Now that I am back in Upstate NY I haven't been able to find it anywhere.
Never, ever had I heard about strawberries dipped in sour cream and brown sugar! But, since I really like all 3, I should definitely give it a try. Artichokes are a fave of mine since I was little, but unfortunately, no one in my family cares for them
And mojitos… yummy. One of my favorite cocktails is a champagne mojito. No clue how they make it at this trendy restaurant here, but its the one cocktail I crave!
Oh! Oh! I have a mojito recipe we LOVE, and I would be honored to know the J-Ms were trying it!
Maggie's Mojitos
Serving size: 1 (we scale it up to how many we need; 3 servings work well for two people)
12 mint leaves
crushed ice
1 T. granulated white sugar
1.25 oz. Captain Morgan original spiced rum (the brand is key here)
1 oz fresh-squeezed lime juice
2 oz. club soda
Put the mint leaves in bottom of big cup/pitcher. Put about an inch or two thick of crushed ice on top. Add sugar, rum, and lime juice. Muddle the mint leaves (i.e. smoosh/grind them with a muddler that you can get at Target) with all the other stuff in there. Then stir it all together. Add club soda, and stir a little more. Voila!
Note: My husband likes to remove the mint leaves after muddling; I like them in there. Either way works fine. Also, raw sugar does not work well. Neither does any other brand of rum, in our opinion.
I believe I have the best Mojito recipe…seeing as the whole neighborhood makes me responsible for making them all summer. Last night we all sat under a canopy in the warm summer rain, drinking 3 pitchers while our kids ran around shirtless cooling off in the rain…bliss.
I think the secret is BROWN sugar:

16-20 mint leaves
2 teaspoons brown sugar
2 thick lime slices
4 ounces Captain Morgan Rum
Lemon lime (I use diet 7-up) soda
Combine mint, brown sugar and lime and muddle with a muddler (or stab a bunch of times with a wooden spoon to release all the mint oils…I use a muddler)
Dump in liquid ingredients and lots of ice, pour in glass with more ice
I usually double this recipe and make in a pitcher

Re: artichokes—
This is how I do them:
1. With scissors, snip off the 'pointy' ends of each leaf and then, with a knife, trim the stem.
2. Rinse artichokes clean with water.
3. Prepare for steaming– I use the largest pot I have with a vegetable steamer inserted in the bottom, along with just enough water to barely touch the bottom of the vegetable steamer. Place artichokes top down (i.e., stems facing upward to top of pot) on steamer.
4. Steam over medium heat, with top on pot, for 30-45 minutes — or until a knife easily glides through the artichoke stems when pierced.
5. We eat them leaf by leaf, and then heart and stem, dipped in melted butter. I also like to squeeze fresh lemon juice on my artichokes.
Strawberries in sour cream and brown sugar…hmmm…need to try it.
p.s. I grew up eating artichokes all summer in Cali…we'd dip the leaves in mayonnaise.

No way would my 3 touch an artichoke! They do love strawberries with brown sugar and whipped cream though (not sour cream for us, haven't tried that).

oh gosh those artichokes look yummy! Love to dip them in melted butter,too!
Here is our FAVORITE Mojito recipe.. We make them by the pitcherful and they are very addicting! Hope you like it as much as we do!
10 limes, fresh pulp and juice
30 leaves fresh mint
3/4 cup sugar
1 cup white rum
club soda, chilled
Place lime juice, mint and sugar into a pitcher. Our pitcher holds about 60 ounces.
Using a muddle stick, mash to release the mint oils, and dissolve sugar into juice.
Add rum and lots of ice topped with club soda.
We then garnish with fresh mint and lime slices.

My mom used to serve us artichokes- yummy! I have tried it as a grownup and yet to find the best recipe to use. Any suggestions?
